Rum Collins, a refreshing cocktail made with light rum, lime juice and sugar. The name is a simplification of the phrase "Rum Cocktail with Cola", which translates to a drink containing rum and cola. This cocktail's origins are supposedly at the Pendennis Club in Louisville, Kentucky. This club was founded by officers from both sides of the American Civil War, so it was natural for them to have some sort of common drink on the menu. They used their access to ingredients from around the world to create their own signature beverage - thus Rum Collins was born!
It has a tart flavor that is enhanced by the addition of soda water. The drink can be enjoyed any time of the day.

Ingredients
¾ ounce freshly squeezed lemon juice
¾ ounce simple syrup
1½ ounces white rum
Ice
Club soda
Lemon wedge and cherry for garnish
Recipe
1. In a cocktail shaker, combine the lemon juice, simple syrup, and rum.
2. Add the ice and shake to chill.
3. Strain into a collins glass filled with ice. Top with the club soda.
4. Garnish with a lemon wedge and a cherry.
