The Ginger-Campari Gin And Tonic is a concoction that was born in 2009. It became popular in London after a few locals started drinking it at the East London Liquor Company, a bar that specializes in gin and tonics. The owner of the bar, Toby Maloney, said he mixed up the drink for his customers.
This cocktail is made with gin, Campari, ginger beer and lime juice. It's served over ice with a slice of lime on top or rimmed with sugar. It is an elegant twist on the classic G&T, opening with crisp gin notes layered with lemon and lime. Furthermore, It's rounded out by sweet red ginger, spicy cinnamon, and spicy cardamom that warms into a woody finish.

1 slice gingerroot, peeled
¾ ounce freshly squeezed lemon juice
¼ ounce Campari
3 ounces London dry gin
Ice
3 ounces tonic water
Lime wheel for garnish
Recipe
1. In a cocktail shaker, combine the gingerroot, lemon juice, and Campari. Muddle.
2. Add the gin and ice and shake to chill.
3. Strain into a rocks glass filled with ice.
4. Top with the tonic water. Stir and garnish with a lime wheel and/or a ginger slice.
